Here are the facts:

I'm a little perplexed as to what to do. The doc tells me to give him more milk, but then he won't eat. He'd get the fat that the doc says he needs, but would miss out on the other nutrients. I'm thinking of trying to find a nutritionist who specializes in children so I can get more information. I feel like the doctor is encouraging me to stop BFing...well, she called it "skim milk" from a nutrient perspective.
I don't feel like he's ready to stop yet, but I'd like to be a good parent and provide the right things. What do I do? What do you do about milk in your household?

I don't have the milk answers you're looking for, but I wanted to say that our kids are twinkies! B was 34.5" and 25 lbs at 18-mos! Don't listen to that Jack-propaganda, tall and skinny is SUPER COOL! :-) (just kidding, jack! we tease because we love)

Actually, I do have one milk-related question/suggestion. I'm not convinced there's really a difference, but I've heard it suggested (and it makes sense) that if a kid drinks a lower-fat cow's milk, then they won't get filled up as much. So they get the good vitamins and protein from milk, but would "leave room" for some fat-desire? Have you tried different "kinds" of milk to see if there's a difference?
B ate 2 bananas today PLUS turkey and ham (in addition to his usual fruit, cheese, carbs). The kid was ON FIRE-- and he's been drinking 2% milk rather than whole. No idea if it's related, but it's a thought.
We had a tough transition to cow's milk, but we were also in a little different situation. Because Jillian was in NICU when she was first born, she had been introduced to formula from the beginning. I did primarily nurse her, but there was probably only a 2-3 month period where she breastfed exclusively. We were both ready to stop nursing around 11 months, but at that point, I pushed her to the full year, figuring, if we made it THAT far.... Anyhow. After we stopped BF-ing, I gave her formula and started introducing whole milk into it a little at a time. She would still not take cow milk alone, so I basically did it the tough love way. I had a huge container of formula, and I vowed that I wouldn't buy another. So when it was finished, I started giving her cow milk. It took her a while to get used to it, but after a few weeks she did and now she LOVES it! I give her a cup (or more) in the morning and another after naptime. She still drinks a teeny bit before bedtime, but that's more out of routine than anything, since she's only interested in a sip or two.
Don't let your pediatrician (or anyone else) dissuade you from continuing to breastfeed. If you're concerned about Amedeo's weight (which I wouldn't be), go ahead and seek out another opinion. But he seems to be a perfectly healthy toddler to me!
Maybe try something like the Horizon organic vanilla (or chocolate or strawberry milk that's 2%) and mix 1/2 with regular 2% or whole milk. I think breastmilk is sweeter (but I'm not certain I have my facts right) so maybe he needs his cow milk to have some extra sweetness?
We're also doing 1/2 a flinstone so on the days where Jack is a milk feind and won't eat much I don't feel too bad about his nutritional intake.
